Selama proses ini berlangsung, asam tartaric dan kulit jeruk kering ditambahkan ke dalam kopi. Setelah fermentasi selesai, buah kopi dikupas dan dibiarkan kering di atas raisedbed hingga mencapai kadar air ideal. Hasil akhir dari proses ini adalah kopi yang manis, asam, dan menyegarkan dengan rasa jeruk. Proses madu memungkinkan aroma kulit jeruk terasa lebih menonjol, namun tidak terlalu buah.<\/p>\n<p>Carlos dan Filipe dan Finca La Esmeralda, tempat ia mulai menanam varietas Caturra. Usahanya dalam menanam, memproduksi, dan mengekspor kopi cukup menguntungkan sehingga ia membeli lima perkebunan tambahan selama bertahun-tahun.
